This week’s meal is Shakshuka. Shakshuka is a Middle Eastern/Mediterrean dish, consisting of poached eggs in a tomato sauce with bell peppers, seasoned with cumin, chilli and pepper.
This recipe is perfect for vegetarians and can be eaten for breakfast or dinner!
Add a teaspoon of coconut oil to your frying pan and add the chopped onion, green peppers and jalapeños to the mix!
Secondly, add the spinach and tomato pasatta. Season with cumin, pepper, paprika and salt. Let the mixture cook for 5 minutes before adding the eggs, cook until it thickens.
Then eat! You can enjoy the shakshuka with pitta bread or alone!
